I think I'm right in saying that only one Patterson cat has every capsized, and that was in a force 11 after the single-handed skipper had fallen asleep from exhaustion and left the autopilot on – a wind-shift came along and turned it over. It didn't sink and he survived intact. That was on a 26 footer! Can you imagine how a monohull even ten or 15 foot longer would have faired? So as far as stability goes, both those designs you mention are rock solid when sailed with no more seamanship than you'd need for a monohull.

The Summer Twins 28 is a great layout inside, though has a massive beam and you'll find marinas a challenge (we pay no multihull supplement on the HT27 because the beam isn't excessive). I don't know the StarTwins but I think the Twins 36 is the only genuinely pretty cat on the market. Most new cats manage to achieve the status of @only their mother would call them beautiful”.

    Good luck.
