I can't help you for the rudders but I am doing too a complete refit.
18 monthes ago I had contact with Mr ROB BLOOD in the USA (I think he is still a member of the HTOWOA). He fitted two 11HP Volvo diesel. He said it was a hard job!!!
I remember he mounted a 5 feet shaft with the 7 ° inclined Volvo gearbox to allow the engines to be exactly at the floor level in the boat.

I bought the two Volvo and plan to install them at the end of this year. (that means probably next year!!!!) If you are interested, we can stay in touch.
