Hi Chrissie
Polar files are used with sailing performance software like MaxSea. They contain an approximate speed for various points of sail/wind speed combination's.
An example would be at 8 kts of apparent wind at 50 degrees approximate performance is 3kts at 90 degrees 4kts and so on.
This is usually used for racing, but I managed to pick up MaxSea weather routing second hand which is great for long range planning using it's weather routing and historic GRIB weather files. I thought someone might already have these polar files which will save me sailing around in circles for a few days to record the information.
